Making Homemade Granola

I have been making this granola for years. The original instructions appeared in an early issue of Mother Earth News, though I don't remember the issue #. The quantities are pretty loose and it turns out different every time. Also I'm pretty sure I've changed it a bit from the original article.

 

Start with 8-10 cups of old fashioned rolled oats

Add 3-5 cups of raw seeds and nuts

In a small sauce pan mix up 1/2 cup vegetable oil and 1/2 up to 1 1/2 cups

honey, raw sugar, brown sugar, syrup or other sweetener

Heat them together until hot and sugars have dissolved

Add cinnamon, nutmeg or other spices if you wish

I usually add about 2 tablespoons of cinnamon and about 1 T. of nutmeg

Stir sweetener mix into oatmeal/nut mix and stir until everything is coated

with sweetener.

 

I mix mine up in a big 21 quart stainless steel bowl and leave it in the bowl for roasting, but you can also spread it out on cookie sheets. Put it in a 350 degree F. oven. Check it and stir it up about every 15 minutes. When it is mostly golden brown turn off the heat and stir in about 3-5 cups of dried fruit. Let cool and package for storage.

 

This granola does not come out in little clumps, like the commercial stuff. Instead each ingredient tends to stay separate from the rest. But it is a tasty way to start your day or have for a snack.
