You can get contiuous production by planting one new row of seeds every week or three. Plant close together and thin by moveing or eating overcrowed seedlings. Lettuse will continue to produce if you peel a few leaves at a time from the outside of each plant.

You're so close to the ultimate solution to solar cooling -- in your link to the "Crosley Icyball." Using a solar collector to provide the heat for an ammonia-absorption cooling system doesn't require any electricity at all, and no intermediate conversions -- the heat-to-cooling process is virtually direct.
