This is because protein contains nitrogen and sulfur which are not found in sucrose. It would also need a phosphorous source to be able to make DNA and RNA. I believe that only a fairly small quantity of these are needed (and they are often included in packets of yeast which are sold for various purposes - and I think it is often called "yeast food"). You should only need enough to multiply the yeast to the desired quantity and to make up for losses when you transfer out some of the ethanol.
