I've just had an idea. Could I do this with only N Channel MOSFETs? So
instead of this:

+V -- P Channel MOSFET -- Resistor -- LED -- N Channel MOSFET -- GND

I'd have:

+V -- Resistor -- LED -- N Channel MOSFET (individual control) -- N
Channel MOSFET (Group Control) -- GND

As a refresher, the idea is to have several LEDs with individual
brightness control, then be able to flash the whole lot together.
