By definition you will have some sort of jitter when you are on the edge of a transition on the pot. The only way I can see around this is to use an algorithm that knows when you are moving the pot. Unfortunately, I can't think of a way to do that that doesn't also ignore small changes when it thinks the pot is not moving. Think about your proposed solution (from your original post): how would you move the pot one step at a time without the algorithm getting it wrong.
