One of the remaining device to web enable at home is a Celair Evaporative
Aircondioner.

I have limited test gear at home, mainly an Analog CRO so hoping someone
would like to hazard a guess as to what protocol the controller uses to get
me going in the right direction

It uses a 4 pin comms cable, so I figure 2 for power and 2 for protocol.

There is about 30m of cable and assuming bi-directional as it provides
control and status.
