Well, if you're willing to take the cop out.... :-)

How 'bout a spring loaded cookie holder. A clip over the top edge and a
spring underneath.
That way the printed surface is always registered to the underside of your
clip and the
spring takes up the difference.

Have to be mindful of the clip not crossing paths with your print head, but
that
seems easy enough to plan around.
