Mitch, on this page is an EVM board for the ADS7828 User Guides (1) http://www.ti.com/product/ADS7828/technicaldocuments The last page of the pdf shows a schematic of the EVM. It has series resistors with optional user caps I've made discrete circuits for a similar purpose, all DC inputs For instance a 4051 switch + TLC549 serial ADC to read a bank of potentiometers, and a 74HC4067 switch + ADS7800 ADC (way back when they were Burr Brown) for several environmental sensors Neither circuit used any caps on the inputs, worked fine.
