I really like rotary encoders with built-in buttons. So it boots up in ones, click to get 10's, again to get 100's, again to get 1000's and loop back around to 1's to get 1's. Of course your display will need to show which mode you're in. I buitl a stepper motor manual mover that had a rotary encoder and a 3-position toggle, so you toggled 1's, 10's and 100's.
