I'd expect that choosing "max" would not do much harm.
If it's in the blanket proper you probably don't want it to reach 76C [!}

and if it is in the controller and remote from the heating element then 76C
also seems a tad excessive.

ie odds are it's a fault rating and not liable to bother you if set
somewhat lower than intended.
