I also work with Win7-SP1 and MPLABX from first beta witout problems. My Hardware is a Dual Core E52'00 with 2GB of RAM. It is not terrible fast, but works ok. I also have an Asus 1210N netbook with 1GB RAM also on Win7-SP1 and, much slower, but also runs it. From time to time I update Java and everything still works fine.
