A couple of ideas here you may be able to use

Depending on what PSU you choose you could use a plastic
enclosure, earthed metal case (connected or not to Vss) or
double insulation, which I think requires more than one failure
for a fault to become dangerous. The main safety point is that
no part that is or can become live is able to be touched by the
user

Use a plastic-shafted pot for example, the mounting bush and
nuts of which are not on the outside case. Either eg PCB mount
or a false panel inside. A plastic knob on a metal pot is not safe
enough
