I don't think this process would be permitted where I live in Central=20 North Carolina, USA. There are time and temperature requirements that=20 are verified and enforced by Restaurant inspections. Although I do like=20 a rare steak myself, rare ground beef is a no-no at the fund raisers I=20 conduct. The risks of bacteria and parasites are real. I might alter my stance if the food could be sterilized with radiation=20 though. Unfortunately, I doubt the clientele would be willing to accept it.
