Arduinos seem to be ubiquitous because they're really good at what they=20 do... making entry level electronics easy. Use that, don't resent it. How about automated cat/dog/bird/fish feeders... electronically locked=20 boxes/cabinets... sun trackers for solar cells... Heck, just dig around on Hackaday and look for relatively easy stuff=20 that would appeal to kids.
