Seems like RH would get you in the ball park. As humidity

goes up, transpiration goes down, IIRC. Photosynthesis

ramps up & down with insolation, which is relatively easy

to measure/integrate - And there are soil moisture probes,

although I'm uncertain how well they work.

Sounds like an interesting project...
