My favorite LM75 is out, because it's only accurate to 2 degrees C.  But I
thought I'd put in a good word for resolution versus accuracy.  The similar
LM73 can be programmed to report down to the nearest 1/32 degree C.  One
naturally asks, "Whatever for, when it can't get anywhere near that
accuracy?"  One application I can think of is PID control, where you don't
care so much about the absolute temperature, but want to see tiny relative
changes so your control loop can react quickly.

As always, it depends on what you really need to do.
