Set GAIN not rails so output is within ADC range at maximum excursion.
Process digitally.

But, if you are looking at signal spikes from punches, AC coupling to
the amplifier allows you to eliminate DC drift and amplifier needs to
be able to handle maximum signal without overloading ACD.=A0  .
For high impact stimulation (aka punching) your signal transitions
shuld stand out from the noise and I'd expect that some basic analog
filtering should improve things.
