Mount the string potentiometer to a fixed place and attach the string to the brake pedal. A string potentiometer is like a self-retracting keychain lanyard. You can make one out of a self-retracting keychain and a 10-turn pot. But I find it easiest to use a large (1.5 inch) pulley (make one out of thick ABS plastic) on a single turn potentiometer. Use a length of spring steel from a small tape measure for return. Squid line or some other type of durable thread/string. Put it all in a small box. Keep the string from ever going slack by tying a knot in the string outside. I put some plumber's silicone grease in the pot to lubricate the wiper, it makes it last longer.
