Wow, I can't believe I missed this -

1. Computer SDRAM, or

2. SPI SD cards, or compact flash.

Cheap, LOTS of memory, and fast enough. Assuming 10MB/s writes on the
cheapest cards, that's 80Mbit/s =3D 80Msps which is WAYYY more than I need.
Super easy interface, and very cheap. I think I found my answer.
