Remember that the 1000 is a minimum over the part's temperature range- the Flash cell endurance goes down significantly as temperature increases, so the minimum number of erase/write cycles given (1K) is is worst case when the part is hot. Getting the Silicon to do 1000 cycles when hot leads to the part lasting through *A LOT* more cycles out of the flash cell at room temperature. Rule of thumb here: don't do your programming cycles with the part in an oven.
