DS61143G which covers PIC32MX3XX and 4XX has a "Product Identification System" page, which doesn't tell you much more that you've already seen here. "MX" is described as "architecture", presumably to mean something like "MIPS core". I would guess the "X" will get more detailed as they license or develop new products in the future. I'd guess the "3XX" part will behave the same way, in the manner of the more familiar Microchip "PIC"s.
