Many laptop supplies can output at least this amount of power, but I can't take in that much voltage because then my linear regulator would be dissipating too much power. 5V is perfect and will keep my design simple and cheap. Cost and availability are ALWAYS top considerations in my designs, even though they're all one off projects.
