I would be tempted to use a combination of a shotgun Mic wall mounted facing activity as much as possible, or a pair either side facing activity, then a surface Mic to bolster when they are not talking in direct line for the shotgun. Obviously levels should be set to favor the shotgun lowering the poor quality of the surface microphone.
