I still have my Houston Instruments plotter (DMP-19, I think) that does
11x17 inch sheets and has something like 8 pens. I originally used it to
plot boards from my Dasoft CAD system on CP/M on a Cromemco computer.

I've always wondered about making boards using conductive ink. Plot a
trace, plot an insulating trace above it, plot the next trace, etc. I'm
not sure what you'd do for pads. Maybe glue parts down with conductive
glue...
