Similar to ob\vents in use in Urumqi (Turkic Uyghur minority there). These people said that were Han Chinese buy my usually insensitive ethnic eye suggested not only Han. Cylindrical oven with top that slopes to a smaller opening may have salt layer inside (Urumqi) but maybe not here. Round flat bread doughlets about 250mm dia are slapped (literally) by hand onto inner walls. Here a small inner fire at base provides heat. Urumqi tend to remove fire proper and leave coals. Browned somewhat risen bread rounds are hooked out with a pair of longish tools with bent pointed ends. Product is crusty, very nice (especially if starved) and sells for $US0.30 = a piece. One provided me with a good eat as you walk supper. Lady wity child very shy. Light levels may just possibly have been pushed a bit [tm] to extract her from shadows.
