It is likely in a diac+triac circuit, similar to a lamp dimmer. None of those use standard taper pots, the resistance profile is special. Blenders, like dimmers, have pretty much one way of interacting with their users - the knob. The correct response of that one part has a huge effect on the user experience, and the manufacturer would spend enough time to get it right. The OP is trying to get it right too.
