I'm definitely not a sysadmin (probably shows, too :) Exim can be a bit of a pain to setup, but it's very flexible and there is lots of documentation out there - and once you've got it running, you can just leave it. The only trouble is that (in my experience), Debian tend to like 'tinkering' with the defaults so that their packaged version of exim will differ from the documentation / examples you find. And Debian tend to ship older versions too. Probably better to just download / compile it from source IMHO.
