So don't use that one. Pick a switcher to fit the problem, not try to warp the problem because you arbitrarily picked a inconvenient switcher. There are many reasonably complete buck switcher chips out there that can easily handle 5 or 6 cells in and produce 5V at 1A out. I would dig around on the Linear site since they have a reasonable selector tool. They tend t= o be expensive, but for one off that doesn't matter.
