There are > DC motors for driving the convection fans, etc. I would guess then, that whatever setup parameters are determined during the 'tune' operation are stored in a RAM that has a capacitor backup voltage source, one of those umpteen farad thingies. Once that is discharged through the machine not being used for some time then the 'tune' operation needs to be done again. Maybe the best scheme is to replace the RAM with FRAM, and pay to get a single 'tune' done to get you on the road again, with the hope that the data is now permanently saved.
