Most materials contract when they freeze. It just happens to happen [tm], that water expands slightly when it freezes so that the ice floats. So oceans and ponds and cream bottles tend to freeze from the top down. Tends to insulate the whole and reduce prospect of pond etc freezing solid. That way the fish and maybe the bugs in your cream have a chance to surviv= e.
