There's very little available in bare glass off-the-shelf. Minimum order quantities and NRE costs for custom LCDs have come way down and that may have something to do with it. For your proof of concept maybe a small graphic LCD. The power requirements will be higher but you could at least play around with digit size and placement. Actually if it's a proof of concept you could buy some thermostats retail and harvest the displays.
