I know how to drive out of control, I've had lots of track time and off-road time and snow/ice time, etc as well as performance driving training. But if a kid runs in front of me I hit the brakes. Maybe you're different? To me, it's panic time when it's a real person out there and not just a pylon or a raccoon.
