There are lots of other parts related to privacy that are the ones that most people seem to pay more attention to, an example would be all the fake names and throwaway email addresses in use. That covers the anonimity side of privacy pretty well. If you want to be able to carefully adjust what forms of privacy you have and have not, not all options are available to you. It appears that what you want is your full name and physical contact information to appear in your posts, but not your email address. I'm afraid that option is not available.
