You can infer certain information based on the sound of the keys. Space and Backspace sound different than normal letter keys, for one thing. There may be timing information that can be inferred such as repeated letters - the time between hitting the T key twice in a row is faster than hitting T and then R, for example. And if the target has an IBM model M keyboard you can just hold a microphone up from a mile away.
