There are a TON of MCU families that easily interface to external
RAM/Flash, yet MChip is very successful with the way they do it.

Obviously a PIC isn't right for you.

Personally, I've done tons of PIC work and have very rarely needed more
RAM/Flash then the PIC supplied.
