I take it you are not asking about RS232 type serial, rather SPI and I2C.

What sort of colour sensor are you thinking of using? If it is like the 
camera used in a lot of cell phones, these come with both I2C for 
controlling the camera, and a parallel bus to download the picture data.

Accelerometers tend to use SPI style interfaces. Analog Devices did have an 
application note on interfacing one of their early chips to a PIC, but I 
cannot find a reference to it now.

To answer more fully, we need to know just what the part numbers of the 
devices you are looking to connect are.
