What sort of colour sensor are you thinking of using? If it is like the camera used in a lot of cell phones, these come with both I2C for controlling the camera, and a parallel bus to download the picture data. Accelerometers tend to use SPI style interfaces. Analog Devices did have an application note on interfacing one of their early chips to a PIC, but I cannot find a reference to it now.
