Thermistor is the best way. Thermistors are much more accurate than they appear to be from specs. E.g. 10% thermistor will have only about +/-2 deg C error from the theoretical calibration point and most thermistors sold now are better than 5%. Digital calibration is easiest. Analog IC sensors seldomly reach real +/-0.5 deg C at three times the price level.
