Cedric: Thermocouple is probably your only real choice with repetitive 1000 deg C exposure. At 1000 centigrade degrees temp difference between the hot and cold junctions you'll get about 40mv with a "K" type with about 1mv per 25 deg C change. Realize that they ONLY measure the temperature difference between the cold and the hot junctions.
