Cedric:
Thermocouple is probably your only real choice with repetitive 1000 deg 
C exposure. At 1000 centigrade degrees temp difference between the hot 
and cold junctions you'll get about 40mv with a "K" type  with about 1mv 
per 25 deg C change. Realize that they ONLY measure the temperature 
difference between the cold and the hot junctions. But if the cold 
junction is in your living space it may always be somewhere near 20C.
