I use whatever OS is right for the job. As an everyday desktop I use Linux. Usually Debian. Currently running Etch on my laptop, and several desktops. On a couple other desktops (one being a development machine) I run Windows 2000 Professional. I also have an extra HD for my laptop that has Win2K on it so I can use it on the road if necessary. For computer controlled/embedded projects I usually use either Linux or [MS| Free]DOS. I even have used BeOS for some projects since it has very low latencies.
