I'd focus on things like buses, CPU architecture, etc.

- Describe I2C, SPI, and the pros / cons of each.  Basically look for
an answer like SPI requires individual chip selects, I2C is only 2
wire, etc.
- How would you generate analog voltages from a uC?
- Draw a circuit to drive a high current LED from a uC.
- What uC's do you have experience with, describe the overall
architecture of them.
