I did a few interviews for the companies I worked for at the moment. My favourite question was "explain the (professional) thing you did and are most proud of". Talking about that thing and a few questions about it always gave me a good impression of the general "thinking level" of the candidate, which was (for the functions that we were hiring for) more important than the immediate knowledge and skill level.
