I think even with exchange there should be an option to set
up IMAP access to the mailbox.  Once that's done, you have
a LOT of choices that will suck down your email via IMAP.

OTOH, you may be better off having Outlook download the
mail to a separate mailbox, and using some 3rd part utility
to export that mailbox to a more desirable format.
