Some use the capacitance of a human finger (and won't work with a plastic stylus). Others use pressure itself, and will work with pretty much anything (this is how most touchscreens in PDAs and the like work). Others use a magnetic or RF system and use styli and/or mice with electronics in them (Wacom does this).
