I definetely could and it's a common way to do this sort of thing, but
I'd have to find a source of reliably dry nitrogen or CO2 and figure out
some way to reliably fill the enclosure. I'm just assuming this would be
expensive and much more annoying then some packets of silicon gel, and
besides, silicon gel packets come with handy little cobolt indicators to
tell you if you screwed up and moisture is getting in....
