The Proteus suite (http://www.labcenter.co.uk/index_uk.htm) will simulate PICs and do spice simulation of the rest of the circuit, they also simulate lots of non-trivial digital chips such as some eeproms and lcds. It will even integrate into mplab letting you step through your program while the rest of your circuit and its interactions with the processor are simulated in it.
