Depth of field in such cases can be close to zero. Unlike most photos involving airborne aeroplanes, the position of the subject in this case is known very very very accurately in advance, or else. If the subject was very slightly off the focus point then the resultant photo would be so stunning and horrifying that the lack of precise focus would be a minor matter.
