Why would you be nervous about tying the CE pin low? Whats the original part doing? Can't imagine it causing a problem. Else....try Cypress, Samsung (they are getting out of the SRAM business), ISSI and GSI for SRAM. Also (think he is on this list) Rochester Electronics....if its the same outfit I recall, they specialize in old and obsolete chips.
