I strongly recommend that anyone who fries food at home or buys fried fast foods have a look at this report Amazingly useful NZ report on deep frying of foods. Aimed at consumer retail outlets with a French Fried chips focus but far more widely applicable. While a NZ report it would have application worldwide. http://www.nhf.org.nz/files/Deep%20Frying%20in%20NZ%2030%20May.pdf I've recently "discovered" rice-bran oil, and this oil fares very well in this and other analyses. It has some health benefits which are due to microcomponents (eg reduces user LDL without affecting HDL). Relative to Olive Oil saturated fat component is about double and monounsaturated fats are somewhat down at the expense of polyunsaturated fats but overall it still appears an excellent food oil. Tastes is good (arguably better than Olive) smoke point is high. Price is far lower than extra-virgin Olive oil (Under $4/litre versus $11 odd). Any Olive Oils other than extra virgin may have been subject to suspect extraction procedures.
