I think that you have to use some logic wrt. The voltage on just one phase. As others have indicated the motor will 'generate' this phase if it is interrupted at the supply after start. The voltage would be ok (slightly higher maybe due to lacking I*R losses and phase). Also what happens if the missing phase is the one where you measure current. This is not so simple imho. There are a lot of special cases to consider imho, a lot of testing.
