Hi Carl,

maybe buffer the sensor / thermistor with an op amp and adjust
its DC output with a pot. That way you won't affect the sensor's /
thermistor's output characatristics by loading it directly with a pot

You could add a 'Calibrate' pushbutton. At a known pressure or
temperature, push the putton and it will add / subtract an offset to
the ADC result of a previously determined reference or standard
